Pork Meatballs
1 lb ground pork
¼ cup scallions
¼ cup cilantro, leaves and tender stems
1 serrano, seeded and roughly chopped
1 inch ginger, peeled and roughly chopped
3-4 cloves garlic, roughly chopped
3 tsp lime juice
2 tsp soy sauce
½ tsp kosher salt
1 tsp fish sauce (optional, but recommended)
Put all ingredients except pork into a food processor and pulse until finely chopped and combined. Scrape mixture into a bowl with the pork and combine without overworking. Make meat mixture into approximately 1 inch balls. Turn on the broiler in the oven to low and place the oven rack at least five inches below the broiler. Put the meatballs on a cooking sheet, making sure they aren’t touching, and broil, turning occasionally, until the meatballs are browned and cooked through. This should take ten minutes or so. Serve with butter lettuce for cups, a fine dice of veggies (cucumber, red pepper, and purple onion) and kimchi mayo. Rice optional as well.
